High Protein Oatmeal
Serves 2
This higher protein oatmeal recipe incorporates eggs to increase the protein while still keeping the usual oatmeal texture, and ground flaxseed adds some healthy fat to the mix! For a more filling breakfast, enjoy topped with berries and either cottage cheese or plain yogurt. Nut butter is also a delicious oatmeal topping!
Ingredients:
- 3/4 cup oats
- 2 eggs
- 1/2 cup 1% (or skim) milk
- 1 Tbsp. ground flaxseed
- 1 tsp. cinnamon
- 1 ripe banana, mashed
Instructions:
- Mix all ingredients together in a pot on the stove; turn to medium high heat.
- Cook, stirring frequently, until mixture reaches normal oatmeal consistency and the eggs are no longer runny. This will take about 5 minutes.
Enjoy!
